Make a Bavarian type pretzel, a pretzel boule or individual pretzel rolls! All are wonderful with soups and stews! The boule pretzel bread loaf slices beautifully for sandwiches. Easy to make, all variations bake to perfection in no time.
12 Pretzels or 2 Boule Breads
1 Stick of Butter
Combine the warm water and the contents of the yeast packet in the bowl of a standing mixer fitted with a dough hook. Let sit for 5 minutes. Add the contents of the mix packet and the softened butter to the yeast mixture and mix until it is thoroughly combined and pulls away from the sides of the bowl to form a ball of dough. Cover with a plastic wrap and set in a warm place to rise until doubled in size, about 1 hour. Punch dough down and turn out to a lightly floured surface.
Line a baking sheet with parchment paper.
Dinner Rolls or Sandwich Buns: Cut dough into 18 pieces for dinner rolls or 9 pieces for sandwich buns. Shape into balls flattening the pieces, folding them a couple of times then pull edges down and pinch together on the bottom until round ball is shaped. Place on baking sheet with pinched sides on bottom spacing about 1-inch apart. Cover with plastic wrap and then a towel and let rise until doubled in size, about 30 minutes.
Preheat oven to 425oF.
Center rack in the oven. Boil the 2 quarts of water in a large saucepan. Slowly add the baking soda to the water and lower the heat to simmer. Place 3-4 rolls, 2-3 buns, 2-3 pretzels or 1 loaf of bread seam side down into the baking soda mixture for 30 seconds. Turn over for an additional 30 seconds. Remove with a slotted spoon onto a clean towel. Then place back onto baking sheet.
Brush tops and sides with the melted butter. Top with the coarse sea salt and cut slits or an “X” on the top of rolls, buns, and bread using a sharp knife. Bake Dinner Rolls for 15-20 minutes, Sandwich Buns for 20-25 minutes, Pretzels for 10-12 minutes and Bread for 15 minutes then reduce temperature to 350oF for 10-15 minutes until evenly browned. Remove from the pan and cool on a wire rack before serving.
